Saint Lucia is a British Commonwealth country that is located north of Trinidad and Tobago. Is is defined by the twin Pitons, Gros Piton and Petit Piton. These are dramatic mountain peaks that shoot vertically out of the water and are one of the most unique sights throughout the Caribbean.
Saint Lucia is a heavily touristed island in the Caribbean with the peak months being between January and April, which also corresponds to the dry season (and of course, North America's winter). It's a wonderful choice if you're looking of an island vacation in the Caribbean.

Check out the local food, which consists of fish and a variety of curry, jerk, rice and stewed dishes. The coal pot is a delicious traditional stew to native caribbean cultures. Look for it at restaurants in Castries, Soufriere and Vieux-Fort. Rotis are usually available in the morning, so if you want an early lunch, check out a roti place.
Some rum shacks in small towns will prepare food if you let them know ahead of time. The often serve fish, vegatable, chicken and goat meals and come with a number of sides such as salad, plantain, breadfruit, macaroni, and rice.
Also try the barbeque, often prepared fast and spicy. It's usually around on a friday night.
You should know that "blackfish" is porpoise, and many environmental groups state that this should not be eaten due to the low populations.
